Recipe of the Week - Sweetly Sour Spare Ribs

Delicious ribs with an eastern appeal - these sweetly sour spare ribs are a treat for the tongue! In any season, these spareribs will please the family. Be certain that you include the proper amount of water so this dish stays juicy and moist.

Yield: 20 portions

Ingredients:

SPARE RIBS                                                             5 Lb.

FLOUR                                                                      1/4 cup

WATER                                                                      2 cups

VINEGAR, WHITE                                                  3/4 cup

CATSUP                                                                     1/2 cup                                                                 

SALT                                                                           1 tsp.

SUGAR                                                                       1-1/2 cups

GREEN PEPPER, chopped 1/4"                                          1 #2.5 can

PINEAPPLE, wedges                                                                 3 cups

ONIONS, sliced thin                                                                   2 large

Standard procedure:

1 - Cut the spare ribs into 2 inch pieces. Dredge in flour, fry ribs in deep fat at 350 degrees until the internal temperatur reaches 155 degrees for a period of 30 seconds.

2. Combine the water, catsup, vinegar, sugar, and salt. Boil. Add ribs and simmer 30 minutes.

3. Blanch Green Pepper. Add pepper, pineapple and onion as a garnish.

4. Serve.
